condiment No matter how I try, my BBQ sauces always seem to burn the pot

I went out and bought a nice 3 gallon double boiler. Made a batch and while it took longer, it didnt burn at all. I bought a stiffer whisk and a little more oil. Thanks for the ideas and info. Only my tomato based bbq seems to burn, the mustard bbq sauce never did. You guys rock!

condiment No matter how I try, my BBQ sauces always seem to burn the pot

Is there a trick to getting BBQ sauces to not stick to the bottom of the pot, even at low temperature and stirring?   One of the BBQ sauces I'm working on has no granulated sugar, but instead is using blackstrap molasses.  I put the pot on the stove, set it to 2 (one notch above Low) and stirred...

pickling How the hell does Claussen pack and seal pickles by never heating the jar?

As I was munching on a Claussen pickle over the weekend, I tilted my head and wondered to myself, how do they seal the jar if it's "Always Refrigerated" and "Never Heated"...   how else would you get the jar to seal?

    Tingling with antici......

I sent in my entry, not expecting anything though, lol.  Too many giants to go up against.  We'll see though, I got 1st place overall in the hot sauce category with it at CT's Durham Fair, which was over 150 entries.  I'm just glad I can compete!

Hiring people to increase sales... on commission

These are friends that have offered like: hey, if you want, i know a lot of businesses around here that would buy your product. Then i feel like i should throw them something for the hookup. Especially if i want to then say, hey, if you know anymore and I'll get you the product, and give you...

Hiring people to increase sales... on commission

Since I debuted my first line about 5 months ago, I've gone through about half my initial stock, converted a lot of it to 3-pack gift boxes and moved those to Amazon where they have been selling well, as well as other venues like Ebay, specialty stores and face to face sales to retail shops and...

misc Advertising campaign ads, did these myself

So the bottom line is, forget Facebook.  The ends did not justify the means.  At all.  Add that to the mysterious clicks that would show up just at the end of each week... not worth it.  I made more sales walking around a flea market and selling cases to vendors than I did with Facebook...

bottling Dry spice blending and filling equipment

One of the toughest dry ingredients in the mix is Hungarian Paprika.  It has a higher moisture content than say, granulated garlic, and what I found, after using a 5 gallon food grade pail like SL suggested, I poured it into 7.5# clear handle jugs, and could still see after gentle shaking...

bottling Dry spice blending and filling equipment

2 upcoming lines for me will be dry spice blends.  I have a commercial kitchen in which to work with, but what's a good brand of mixer that will evenly let me combine and bottle between 5 and 100 pounds of dry spices at once?  Hopefully it can provide a way to fill the bottles or a spigot I can...

shipping Be aware: when shipping with flat rate padded envelopes, you must choose 'padded'

I always chose Flat Rate padded envelope when shipping boxes with 1 - 4 bottles because they fit well and cost me $5.70, a savings I can pass on to the customer   But a few times last week I shipped things out and the clerk rang them up as "Flat Rate envelopes" - which were slightly less...

How do you fill a 5 oz. woozy bottle?

I tried the one that's "highly recommended" and cost me $400 and I've used it a total of 5 times.  It makes a huge mess at the end of the throw (it 'pees' even if you aren't moving it)... specifically with loose sauces.  I've also found the fill wasn't as dead on as boasted.  I tried with hot...
