    Peter, check your rub. If it has a good salt content you may want to not put it on the night before,the salt can pull moisture out and even give the ribs a "hammy" taste. Rub the ribs 1-2 hours before putting them on the smoker if the rub has salt. Good luck. Scott

    Pepperbelly, you'll have some spots hotter than others on your smoker and without the mods most likely will stay that way. To learn what spots are where, just get a cheap pack of biscuits, like in the tube, place them on the smoker and after 1 5-20 mins open it up and you'll see some done more...

    I've got them in a foil pan with a plastic lid on the floor in front of a sliding glass door on the south side of the house. They stay pretty warm during the day, house temp is set at 67 at night. Scott
