I "cold smoke" mine at no more than 105° F for 36 hours and finish them in a dehydrator. Small charcoal fire with oak, or maple.

I use one of the NESCO units to dehydrate my tomatoes and peppers. Use the lowest temperature setting, or they "cook"! I slit the peppers to dry them crisp, otherwise they rot. Tomatoes, I slice into 1/4-3/8" slices and because of the sugar in them, they are usually still pliable when dry...

Well, they are not completely stretching the truth... It does take about apound of fresh peppers to make about this much powder.... My Habaneros grind 96 peppers for an ounce.

I got my order while I was off pursuing fast food during opening day in Pennsylvania. The gift bag seeds were ones that I really want to grow! The rest of the order was timely and right there too!

That ripens just like the "Bonnies World's Hottest" I bought this year. Orange tending to red Hab.

Why? I ordered from them and got exactly what I expected and desired?

I ordered from Joe, and though I had a good season and harvested many beautiful peppers, mine were not Bhut Jolokia. To his credit though, I had eight seedlings out of the eleven "Bhut" seeds I got sprout and grow. The peter peppers did well.

Here are a few of the peppers grown this year. I am disappointed because the Bhut Jolokia seeds I bought turned out to not be thus. Lots of varied bells, Habs, Cayenne, Jalapenos.... But, I have a good sampling of differing and interesting peppers to eat and enjoy until next year...

I spent the day selecting and saving the plants I wish to overwinter here in Kennesaw. Good to see another pepper grower around here!
