No sir just Navy, but there was schooling for that. I've cooked for the boys, the officers, the Admirals, the leader of Thailand (once), I was a baker on board for a bit over a year. I've done it all. And in mass. I cantcall myself a chef because I never had the formal training. True chefs might see me as a hack. I do know my way around the kitchen and the bakery. I'm real good at looking at a pantry and whiping up something tasty.


Are you inventive in the kitchen?
 
Not really. I'm pretty simple. You've tried a few of my sauces, so you know they aren't anything special or new.

Are you a strict recipe guy or a throw stuff together and keep adding stuff until it's edible cook?

Did you have a good game day turnout?
 
Tonight was a dud. But oh well. It was a nice, quiet night and I got out early.

Would you even survive our winters if you came to work for me?
 
Actualy maybe not. We left Illinois when I was a wee one because of the winters. I'm spoiled. I do like the cold, but snow I'm not sure about.

Can you cook a burger?

Nice fatty beef patty, salt, pepper, garlic powder, splash of worchestershire. On the stove to the side cook up onions with salt, and pepper. Also cook up mushrooms with salt and pepper. Top burger with several pickle chips. Then place a lot of shreaded cheese atop. Cover with a metal bowl and squirt water under bowl to steam. After nature makes the cheese into utter heaven, fold the mess back atop the burger. Top with an over easy egg, onions, and mushrooms. Place on large, toasted, sesame seeded bun that has been spread with spicey mayo. Add a good beer on the side. ENJOY

Sounds good to me, but hold the fungus. I try to avoid eating anything that grows on my bath mat.

Are you going to hit those sautéed onions with a squirt of beef broth right before they are done?
 
Nice touch. I like that idea.

Spring, yes please. I'm tired of getting wet. I have to work rain or shine and getting wet sucks.


Do you have a signature dish?
 
Not really, but I cooked for Bear Grylls a while back and he said the food was good.

Edit: Tasha says my Asian inspired sticky chicken and my meatloaf. I can throwdown on some korma and murgh makhani as well.

How about you?
 
Nothin that is really distincly mine. Maybe my "jackum up" patato soup. I make it thick and creamy and add pepperjack. I also make a crab/cream cheese won ton with green onion that is big like a mc Donalds pie.


Do you wtite down new recipes you create or just wing it and its different each time?
 
I try to write down new ideas, but sometimes I get too involved and forget. I can think of one time I got too involved and neglected to write down what I did. It was a pork verde chili. It came out perfect. Years later I haven't even gotten close to recreating it.

What is your opinion on eating bugs like they do in some area of the world?
 
Naw, bugs are off my plate. I have, however, had dried grasshoppers in Thailand. Liittle monk dude was pedling them and had a jar of hotsauce on a sling he would carry with him. They were light brown like wheat and crunchy like chips. Kinda tasty.



Do you like deer/venison? I've tried and tried, but it always tastes kinda gamey and nasty to me.
 
It's not my favorite, but it really depends on a lot of factors. A tough old sagebrush fed mule deer isn't going to be as good as a young, corn fed whitetail. How they are processed and prepared is another huge factor.

What seasoning can you not live without?
 
Something to make the food salty. Salt, soy sauce, fish sauce, anchovy. Anything that will make the food salty. I'm also a huge fan of Smoked paprika.



You?
 
I tie flies for fly fishing (it been a while though). I enjoy fleamarkets and thrift stores and yard sales. I collect other peoples left over stuff. Our home is avant-yardsale. The couch was 50, the table was 20. Ect. Everything was bought with coins found under the cushins. My relate to food as well. I collect cookbooks. I also gravitate towards cool boxes. I like cigar type wooden boxes. Some times I put stuff in them other times I just think they look cool. Oh and books. I have a lot of books. I like poetry books and lots of paperbacks that I read. My dad was a librarian, so I surround mysrlf with books.



What are your hobbies?
 
Yo-yoing, drawing, graphic design, photography, video games, reading, dog training, and of course...gardening.
 
What is your dream job?
 
If by handy you really mean lazy then yes. Im crafty. I make just about anything. Handy, no not really. Not mechanical. My pa taught a great respect for knowledge rather than hands on skills. When the car breaks down I'm fucked. When somthing around the house breaks I'm pretty much phoning my brother in law. Intelectual stuff I have handled, but handy stuff eludes me. I can, however, make, nearly anything (if I have the tools) leather, chain mail, knit, macrame, jewelry, draw, paint, clay, stained glass, wood work, crochet, neadle point, cook,bake, dehydrate, pickle. The bottom line is: If it intrests me I will figure out how to make it. Lately I have been interested in food. If I go and have ab exotic dish the I find mind blowing, I will thrive to replicate it. I did this with PHO. That shit takes a whole weekend to brew.
