I grew up in SE Texas/SW Louisiana down on the Gulf Coast, so cookin' both Cajun style and Seafood for Throwdowns IMHO gives me "homefield advantage".

In "True Cajun" cooking (aka Coonass cookin') it's called "See-Food". If it flys, swims, slithers or crawls and you see it before it sees you... it's food!

Hmmmm, it is possible to use the same ingredient for several dishes...

I'm wondering just how many ways are there to cook gator? ...or a nutria for that matter, for that downhome swampy flavor goodness.

Gator is good smoked, mix with cream cheese/sour cream mixture, serve as spread.

...nope, completely different dishes, though they share some of the same ingredients.

I've also made sausage, boudin, and *censored for TD* using gator as an ingredient.
