Jamaican Me Ungry Mon

Buns: Bakers flour, stout, yeast and salt.

Naked Slaw: Carrot, cabbage, white onion and orange slices.

Jerk Mariande: Pineapple juice, brown sugar, salt, thyme, pimento, garlic, green onion, rum, cinnamon, black pepper, lime juice.

Chicken thighs were sliced and marinaded for 3 hours then minced and formed into patties and cooked over charcoal with pimento thrown in for smoke. Pineapple too.

Jerk Sauce: Remaining marinade mixed with more rum, butter and brown sugar and reduced.

Very happy with all of it. Buns were awesome and the jerk sauce is going in my recipe folder.

Hog with a Halo In Cuisinart combine Chopped Pork Loin, 3 Green Cayenne Peppers,Garlic,Small Splash of Fish Sauce. I also added a smoked pepper blend of my own. Chop Pineapple Top and set aside. Core Pineapple. Fill with Pork Burger Put top of Pineapple back on. And fasten with toothpicks. Add to smoker smoke till done. Allow to rest,slice and enjoy.

Jesus - TB just made my decision really, really hard. I wondered if someone was gonna do crab cake burgers - that was going to be my entry had I participated (being from Maryland originally and all...) - and I have a weakness for freshly made [background=rgb(255, 244, 228)]hollandaise [/background]sauce.

LadySic, you just got some serious competition.

So far so many incredible entries - again, I'll reserve judgement and will carefully review every entry when closed, but these two stand out tall for me.


Ps - for a burger called "panty dropper" it's a bit dry. I'd expect a lot of moisture and maybe even some dripping sauce with a name like that. ;)

Hey Grassy - I think that wine qualifies as a side dish in some parts!

actually it was pretty moist from the oils in the blue cheese and fresh peppers, the picture was terrible and by that point i'd had half a bottle of whiskey... the flash was way too complicated... oh well, first TD; every experience is a learning experience! I think next time i'll use remoulade sauce as well! thanks for the suggestion LDHS, any suggestions for improvement are appreciated!!!
 
LDHS, Yum's burger worked. She dropped trow, and made him make an omlet in the morning. The dripping just didn't make the pic!
 
Ingredients, more or less some spices and hab missing, but you get the idea.

Sweet potato, profusely stabbed with a fork, then buttered, will wrap in the foil and roast in the oven @ 350 for 2 ½ hours.

Ground Turkey, formed into patties the seasoned with fresh ground black pepper, sea salt and chipotle, the seared on 650 -700 CI.

another great entry. i do believe that we are some of the finest cooks around. if anyone that has entered any of these 3 burger t.d. would not want me to use there pics please p.m. me and tell me so. cause i have me a idea of doing something cool with all of these entry pics.
 
Holiday

This burger is to bring all the flavors of Christmas together on a bun, the turkey, the Christmas ham, sweet potatoes and being in New Mexico it would not be Christmas without Green and Red chile.

Cooking method seared the ground turkey burger on Cast Iron.

The ingredients are listed as per the burger build, from the bun up.

Sweet Potato bun
  • One fresh roasted sweet potato, still warm out of the oven
  • Flour
  • Water
  • Heavy Cream
  • Butter
  • Eggs
  • Salt
  • Sugar
  • Yeast
Turkey Burger
  • Lean ground turkey
  • Black Pepper, Fresh ground
  • Sea Salt
  • Chipotle
  • Topped with Swiss, Imported Holland Maasdam, allowed to melt over the patty
Red Chile Sauce
  • Beacon grease
  • Flour
  • Garlic, fresh minced
  • Red chile powder, Roasted New Mexico Chimayo
  • Sea salt
  • Chicken stock
Ham
  • Sweet Ham, Boarshead thin sliced (Closest I could get to Christmas Ham)
  • Topped with Buttery Havarti Cheese, Imported from Denmark, and allowed to melt into a gooey mess
Green Chile
  • New Mexico Green Chile, Roasted, peeled, deseeded and chopped
  • Habaneros, diced
  • Red onion, diced
  • Sun Dried Tomatoes, diced
  • Garlic, Fresh Minced
  • Oregano, dried
  • Thyme, dried
