contest BEGIN! Burger Royale Round 3 - Alternative

BOGAN BURGER


So no real suprises, my non beef burger is a Kangaroo creation. It was loud, bright and bloody tasty.

Crusty White Bread

500gms White Bread mix
2 tsp yeast
2 tsp sugar
1 tsp salt
400gms water

Kiwi Sauce

1 kiwi
1 tbsp lime juice
1/2 tsp Basil puree
1 tsp oil
1 jalapeno
1 tsp honey

All ingredients put into the bar mix, blended and then strained through a sieve.

Beetroot Relish

1 Beetroot
1 tsp garlic
4 Birds Eye chillis
1 tbsp lemon juice
1 tsp oil
1/4 tsp thyme puree
1/4 tsp rosemary puree

Beetroot boiled for 30 minutes in vinegar/water mix. All ingredients put into the bar mix and blended.

Mushrooms and onion were cooked in a lot of butter until nice and brown. Bacon fried and egg fried.

French toast

2 slices of Bread
3 eggs
1 tbsp Habanero Powder

Kangaroo Patties

Approx 350gms Kangaroo Steak
Salt 1 tsp
Pepper 1 tsp
2 tsp Habanero Sauce

Putting it together

Eggs and habanero powder were whisked together. Bread was dunked in mixture then thrown into a hot ci pan with oil and fried both sides

Bottom slice of bread was covered in beetroot relish. Then one patty was place on top, kiwi sauce, bacon, egg, mushroom and onions, patty, kiwi sauce and topped with baked beans, then the other slice of french toast on top.

What is cactus fries.




Sorry all I could get my hands on is bison.
cactus fries are Cactus fries,,,,,like you know Cactus? they are best served with a pear jelly type relish.

How about this......I'm so anxious to get started on my burger that I dragged my son out the door an hour early for church.......
only realized it when we where 3/4 of the way there......DOH!
 
Booma...WOW!!!!!!

Never had 'roo meat before. Maybe never will. But it looks good and juicy!!!
Interesting touch with the baked beans on top. And beets.
I'd sure give that a try!!!! Great job.

PORKING DEER BURGER



ingredients:
roll baked with hatch powder
half a orange and chocolate habanero and jalapenos
tomato,garlic,mayo,mustard and extra sharp cheddar
ground deer with bacon and pork shoulder




prep:
mixed half a orange and half a chocolate habanero and a few jerks of garlic in with meat
fried the pattys
put some mayo on fresh baked roll then 2 slices of tomato
threw a patty on
dumped melted cheese
threw another patty
dumped more cheese on
chucked a handfull of chopped jalos
squirted a little mustard and topped with other half of roll

Redhawk's honey mustard is FANTASTIC, and should go excellently with this combo. Just sayin'..... ;)

Hoping to do this on the grill, but the weather's not cooperating, so may have to pull out the CI.

Gee- your ingredients list has me scared..................(<<<<~those are for you) but I know you will pull off some awesome sauce with them!
 
:( forgot the POL yesterday when I made my elk burgers... Ugh, I may not have time to do them again. That's what happens when you cook for a date and drink half a bottle of whiskey.

Mango
Redhawk's Habanero Honey Mustard
Bell pepper
Jalape&ntilde;o - pickled
Onion
Asparagus
Sea salt
Garlic
Pepper powder - cayenne
Coriander
Tarragon
Cumin
Olive oil
Wheat slider buns

I like to add a touch of fat to a very lean cut of meat such as this, to ensure moistness.
Mix bison with sea salt, pepper powder, garlic, coriander, tarragon, cumin and olive oil. Grill or CI.
Steam asparagus.
Saut&eacute;e mango in Red's mustard.
Saut&eacute;e onion in olive oil, add in bell pepper.
Layer on bun: bison patty, havarti, onion, asparagus, mango, bell pepper, and jalape&ntilde;os.

I'm not much of a sandwich fan, which includes most burgers, but THIS WAS GOOD. Loosely packed the patties, so no pillow-patties. I approached them the same way I approach making steak - I like my red meat to still be pretty darned RED. This also made them very tender. The tartness of the mustard and pickled jalape&ntilde;os served to offset some of the sweetness of the mango. All in all, I'm very pleased with the outcome.

The SIC Salmon Smash

Burger Build:
Spread a generous amount of cheese spread on bottom bun.
Buttercrunch lettuce
tomato slice
Salmon Patty
a dollop of cheese spread on patty
Shrimp Panko Omlete
Spread cheese spread on top bun and cover


Patties:
Salmon, Panko, sweet yellow and orange peppers, chocolate hab, orange hab, garlic, Dale's marinade, egg, lemon juice and dash of seafood rub.
Process meat, panko, peppers, garlic, and seafood rub
Mix a beaten egg, Dales, and lemon juice.
Add meat mix to egg mix and form patties.
Cook on a lightly olive oil coated griddle.

Shrimp Panko Omlete:
Shrimp, egg, Panko cooked in olive oil

Bread:
Bread Mix mixed with rosemary, dill, garlic. Topped with crushed thai pepper, rosemary, and dill. Baked and brushed with butter. Grill lightly on griddle before building burger.

Cheese Spread:
Mascarpone, chopped shrimp, diced hot red chili hybrid, dill, lemon zest, and lemon juice. Mix well.

As suspected, LadySic's is a winner for me.

I'll reserve judgement until voting time so I can fairly evaluate all the entrants, but a salmon burger with a shrimp-marscapone spread is just so ridiculously delicious and the photos look light and somewhat healthy even.

While the roo-burgers and deer-sausage and all those other look good, this one shines. Just a step above for class.

The bison burger by Geeme is my 2nd favorite. The ladies got it goin' on this week.
