Guido's Tre Formaggi Meatball Po-Boy

 

 

 

 
Bread:
4 cups flour
1 cup water
1 packet yeast
1 tbl sugar

proof the yeast, add to flour, knead till it no longer sticks to the side. Let rise to double. divide into 3 parts and roll into loaves.
cook at 400F spraying occasionally with water until done.



Meatball
2 lbs. Jimmy Dean Italian sausage
1 egg
2 slices of bread
1 tbl. powdered garlic
1 teaspoon fennel roasted and ground
1 tsp salt
2 tbl. red pepper flakes
 
Put bread through food processor, add to sausage, add all ingredients and mix. Form into nice size balls and cook at 275 for 40 minutes.

 
Roast a bell pepper, peel and cut into slices

Cut a loaf in half, add Gorgonzola to the bottom half of the loaf, cover that with sliced Mozzarella, placed sliced halves on the meatballs on top of that, pour spaghetti sauce over it. On the other half, place Provolone cheese and place the slices of bell pepper on top of that. Return to oven to melt the cheese. Combine the two halves and serve it up.

Pork Choy Sammie with Cheezy Reaper Sauce on Focaccia

Focaccia    
 
 basic recipe  lifted  straight from Anne Burrell originally if I remember right.

Sammie ingredients.
 

 
two baby bok choy  rough chopped
8 or 9 thin slices of left over pork roast.  ( just oven roasted rubbed with  salt and rosemary  and a thin coat of EVOO)
Melted butter 1 1/2 tbsp
minced clove of garlic
reaper cheeze sauce  ( as follows)
 
square piece of the focaccia split , brushed with melted butter and grilled 
 
 
fry the pork slices, boy choy and minced garlic in remaining melted butter. 
 
 
Reaper Cheeze sauce  
 
1/4 tsp  Sodium Citrate
90 grams shredded cheese
 ( 30 grams each of extra old white cheddar, Oka, and mozz)
1/4 of a dehydrated Reaper finely minced
30 grams of dry vermouth
 
add the sodium citrate and vermouth to pot and warm to steaming but not bubbling.
stir then add the cheeses and minced reaper
, stir until melty
 
 
 
 assemble and enjoy.

Great little sandwich with simple flavours that stand up to the reaper cheeze sauce.   the bok choy might seem weird but I love that stuff and use it for many things besides asian dishes.  
 It does some really magical things when added into homemade chicken/ veggie   broth stock.
