I am not caught up on all the action yet, so much going on, but Essegi, wow. Great presentation, and also practical, not just for looks. Very VERY nice!

Was able to get them to grind the cuts I wanted, but couldn't get chili grind ...

Otherwise, each entry before has part of what mine will be ...

CB bowls (less awesome), tequila (with kaffir lime), multiple beans, corn, mexican chocolate etc ...

But I've got dried poddage from JHP and tubs of heavenly smoked Benton's fat, and that ish is served beyond the pearly gates, I'm sure of it ...

Be careful which pod you use, they are 2 to 11 in heat hahahahha

Chili Conejo :dance:(don't let JayT see this-rabbit)
 
Portuguese corn bread
1 1/2 cups cornmeal
1 1/2 teaspoons salt
1 cup boiling water
2 tablespoons olive oil
1 (.25 ounce) package active dry yeast
1 teaspoon white sugar
1/4 cup warm water (110 degrees F/45 degrees C)
2 cups all-purpose flour
 
Proof yeast. Mix boiling water, 1 cup of cornmeal, salt and 1 tbl of olive oil and let cool to lukewarm.
Add the rest of the ingredients and let rest to double size.
Put in pie pan and let double in size.
 
Preheat oven to 350f, put in oven for 40min or until top is golden brown.
 
Chili powder
4 dried poblanos
5 dried thai peppers
1 tbl. Of Tepin peppers
2 tbl. Of cumin seeds.
Dry for several minutes the peppers, deseeded and place in foodprocessor
Roast cumin seeds over medium heat for several minutes and place that in foodprocessor.
Add 2 tbl. Garlic powder
Blend until it has the consistency of powder.
 
Chili Conejo
1 cup of pinto beans
1.5 quarts of conejo stock
1 conejo deboned and cut into pieces
3 reg. onions
Salt to taste
4 tbls. Of chili powder
 
Precook 1 cup of pinto beans in conejo stock.
 
Saute’ diced onions in some oil until translucent.
Add the chili powder and still until well mixed.
Add pinto beans and stock to mixture.
Add the meat.
Salt to taste.
 

 
 
Cornejo? Cornejo stock? I think you should translate for the benefit of voting, I am thinking Cornish hen lol.
