I take my hat off to ya'sir!!!

Thank you sir (paulky_2000), but your entry(ies) will be tough to beat. My hat is off to you! And glad you entered.

Maine Chipotle Cheese Wrapped Dog

I did Maine, and used the most used Maine ingredient. The Maine potato.

Kept it good and simple. Thats a fire roasted frank with chipotle potatoes, wrapped in fried cheese. The chipotle cheddar sauce. The outside cheese is tasty and crunchy. Ever baked cheese onto a pan? Well that's what it's like. You may ask, why present on a paper plate? The answer is simple. "It's a hot dog duh!"

The chipotle mashed potatoes, those specs in there is MORE CHEESE.

Frying the cheese so I can use it as a wrap.

You can see the potato in the wrap here. And the crunchy goodness of the fried cheese.

Sorry to keep things so short, but things are busy and I gotta run.

So Orlando, like SoFlo is a great big mix up of a lot of cultures. Quite a few of them Caribbean. From Cuba to Haiti, Jamaica to the American Virgin Islands. Then there are all of the European influences especially noted at Epcot. I chose to focus on one and so I give you:

RocketManÂ’s Original

Orlando Jamaican Me So Hot, Dawg

Cast of Players:

Sweet Potato
Golden Raisins
Crushed Pineapple
Jamaican Jerk Seasoning
Red Onion
Fresh Ginger
Worcestershire Sauce
Grated Lime Peel
Cumin Seed
Red Habanero Peppers
Hot Stuff Powder

First I match sticked the Sweet Potato and the Red Onion and placed then into a pot. To that added Raisins, Pineapple, Jerk Seasoning, Ginger Worcestershire Sauce, Lime Peel, Cumin Seeds (slightly crushed), Hot Stuff Powder and the Habaneros and enough water to cover. These were allowed to gt happy together for a couple of hours over very low heat.

When ready added the Hot Dogs and allowed to cook for 10 minutes over the same very low heat. Dogs were then removed rolled in Jerk Seasoning and out to the grill where tey were finished off.

All of the goodies were removed from the sauce and the sauce thickened with a little Corn starch and now itÂ’s time to assemble. Into a toasted bun goes one nicely jerked and grilled dog. Then a nice layer of the goodies from the sauce and toped with some of the thickened sauce.

There's 8 pages here, I haven't looked at 7!

Everyone make sure you did the Proof of Life and "To enter you must create a post in this topic with the hot dog name preceded by the area you chose, an explanation of how your hot dog correlates to the area, ingredients and cooking methods, and at least one presentation picture of a single hot dog."

Thanks Paulky I appreciate the kind words.

Wow looking good everybody, there is not a single dog here so far I wouldn't gobble down without a breath.
