I did one sweet, one savory also, but the sweet one isn't done yet hence no pics. But I did spice it up~~~




edit- and Oh, Yea! Made my own butter crust......cha-ching!!!

Im just hoping I have enough time to do mine now.. since it requires some slow cooking for a many hours of one major ingredient.........
 
both pies will have copious amounts of spice..

savoury filling in the pot but that'll take a few hours to cook... will start on the sweet one soon..

i even managed to score some foil pie tins from the bakery - FOR FREE!!! so i'll see which ones look better.. mini pies using bakery tins or the big one in the pie dish...

we're going to be eating pie for a month!
 
Jalapeno Missile Burger Pies

5o'clocksomewhere here. Spent my Friday evening makin' some meat pies. Here's a little teaser for my Jalapeno Missile Burger Pies.

So, here's how it all worked. I threw some onion and garlic in the cast iron while the poblanos charred up on the grill. After sweating for a few minutes in the pan, the onions were joined by a pound of ground beef, some cumin, some adobo seasoning, ground mustard, cayenne pepper, salt, and fresh cracked black pepper. When the meat was almost browned, I threw in three diced up fresh jalapenos. Here's a shot of everyone in the pool.

After the meat was fully cooked, I moved into stuffing mode. Into the pie crusts went the meat mixture and a slice of provolone cheese. My pie-ness was fully erect after this, and here's the visual proof:

After 10 minutes in the oven, my pie-ness was in its full glory. Here's how it turned out:

Salsalady's Chorizo Empanadas

Check out this yumminess!!!!

All the ingredients for both pies, all mixed up. I wasn't sure how it was going to be posted, and we were all in a hurry to eat, so they all went up together. Check out the little pepper plant still in it's growing pot. It has a good-size pod that's going into dinner!

Pie#1- Chorizo and Potato Empanadas w/ potatoes, chive and garlic cream and hot sauce

chorizo
onion
garlic
tomato paste
potato

Butter pastry crust

creme
first pepper pod from plants (mild and crispy fresh)
fresh chives from garden
garlic
(and for the grownups) chipotle powder and Ghost Fire hot sauce

The chile is a "mystery pepper". I carefully tasted a slice of the pod before deciding where to use it, and it was very mild. Not even like a jalapeno. Still, so very fresh, I decided to use it in the creme.

Here is the chorizo and onions, getting all happyhappy. After draining the chorizo and onions, I added the hashbrowns---aka---potatoes! I haven't been keeping fresh spuds and this brand of frozen hashbrowns has one ingredient listed on the label...Potatoes! It worked GREAT for the empanadas!

I have pics of the Pastry in the next Pie Posts, so I'll skip ahead to the serious business.....DeepFriedandSanctified!

I used a lid from a plastic pitcher to cut out the pastry circles to around 4" diameter. It worked perfect. SalsaKid helped with filling and sealing the empanadas. I wouldn't let him try to deep fry them, but he still managed to touch the tongs straight out of the oil and burned his pinky. He's fine, no worries, but he danced around the kitchen for a few minutes! LOL.

And The Plate Up-

On the plate you can see the empanadas and some of the kid's chive/chile creme (no heat), in the background is the grown-up's chipotle creme, beverages, and Ghost Fire hot sauce.

This was definitely an enjoyable splurge for us. Tomorrow is back on the diet, but tonight....it's all good!!!

Salsalady's Pecan Pie THP-style

And Pie #2 is the sweet Pecan Pie with chocolate and chili powder in a butter crust


Here's the crust pictures for Pie #1 and Pie #2-
The pastry ingredients-
flour
unsalted butter (diced and in freezer for 30-60 min)
salt
sugar
ice water

Pulse dry ingredients in food processor to blend. Add chilled butter, pulse until it resembled coarse bread crumbs. Add 4-6 Tbsp ice water, pulsing machine, just until dough sticks together.

This was the first time I've used a food processor for pastry dough and I really liked it! So quick and easy and it got all the little crumbs to the same size.

Here's a pic of the pie batter. Blended butter and sugar, Kahlua and chile powder in the bowl, just to prove I did put spices in the pie! -grin-

And the Grande Finale!

This is a classic Pecan pie with a layer of melted chocolate on top of the really rich butter crust and just a hint of spicyness. SalsaKid garnished his own plate with whip cream and pecans. Can you tell which one is his?

It has top crust and bottom crust, doesn't say it has to be in a dish! :)
