Jalapeno Tuna Burgers Two Ways
Spicy Smashed Avocado Tuna Burger
Served with pickled red onion, cucumber and spicy mayo
Chipotle Pineapple and Mango Tuna Burger
Served with lettuce and spicy mayo
Tuna Burgers
2 lbs. Sushi grade tuna minced
2 Jalapenos minced
1 Tbsp. Toasted sesame oil
1 Tbsp. Mongolian Fire Chili oil
2 Tbsp. Kewpie mayonnaise
8-10 Club Crackers crushed
Zest of half a lemon
Combine all ingredients and mix together. Form patties and place in refrigerator for a minimum of 30 minutes to allow the patties to firm up.
Cook in high temperature cast iron skillet to 105-110 internal temp to get crust formed while maintaining medium rare center. Let rest a couple of minutes before serving.
Pineapple Chipotle Relish
1 Pineapple cored and diced
1/2 cup diced red onion
2 Tbsp. Chipotle in adobo diced
Mix all ingredients and cover. Let sit for at least on hour for the flavors to meld.
Spicy Smashed Avocado
1 Avocado
1 1/2 Tbsp. Sriracha
Couple pinches of sea salt
Combine ingredients in a bowl and smash with a fork. Avoid over mixing and leave some chunks of avacado.
