You roast or char it and the nuttiness come out. Tastes like popcorn. It's cabbagy and eggplanty when boiled, it's butternut squashy when slow cooked or simmed. It rocks. So many uses.

Some of my fave cauliflower is Indian recipes. Curried and in Indian bread, as a wrap.
 
I'm surprised TC doesn't like it, some of the best I've had is just charred on the grill with EVOO and parmigiano-reggiano. Try it and you will see it actually has flavor! Yes, it is also a sponge but it also has flavor, not tasted so much when raw.
