Folks are finding a handful of yeasts that 'work' at this point, mostly all are ale yeast from across the pond originally ...
 
I've seen folks say that S-04 has a fair amount of capacity for the biotransformation work, and it would be handy to use a dry yeast ...

I may try that. I like S-04. It was great in that Cherrye Wheat I made. That wasn't aggressively hopped though obviously.
 
Now that photobucket is finally back up...

I was really stoked to try his beer out, because I love RIS, and it has such stellar reviews. The problem is that the beer went bad somehow. It was still carbonated, but tasted like straight up metallic, and like marmite/vegemite, without the saltiness. The aroma smelled like a freshly opened jar of marmite. I know that definitely isn't the way the beer is supposed to taste/smell, so I'm positive it went bad. Really weird.
