Awesome! I just finished trimming up these bad boys. I'm about to fire up a chimney of Royal Oak. People are going to start showing up at 2 tomorrow, so an overnight smoke is clutch for these ribs. I'm making ceviche for an appetizer, and some smoked ham nachos from the ham a few nights ago. A buddy of mine is bringing some lamb chops as well, so those will be slapped on the barbie with a quickness as well.
