Processed my last 2 ferments, #9 and #10. I kind of forgot about these and came across them the other day. #9 color is a bit off, but is one of my favorites (although I am not picking up on the raspberry flavor). #10 was a bit dry so when processing I had to add some rice vinegar.

Nice work. I tried a ferment and did not have success, going to try again soon. Great looking sauces.

Going to fire up a few more ferments today. Cleaning out the freezer . . . red jalapenos, serranos, yellow bouquets, mixed yellow/oranges. Not big quantities of anything - we'll see what I end up with.

Those newest ferments look terrific love the combinations of ingredients in the ferments. I ferment just the peppers and add other ingredients when cooking my sauce but I like how your fermenting everything before processing. Those ferments look so fresh I'd want to open up and taste them right now. The hot sauces look so delicious and can't wait to give your stuff a taste Buddy. Two thumbs up!
