Step away from beef burgers the last week or 2, and really trying to perfect that perfect fried chicken burger
 
Chicken thighs dusted with a little sea salt and pepper
 

 
Dipped in a eqq wash mix, containing fresh ground chilli, hot sauce and some cayenne powder
 

 
Then rolled in a flour mix, containing more cayenne, paprika, cumin, coriander, mustard, garlic and onion powder
 

 
Fried at 180 until nice and golden brown
