Wow TB you've really gone from not overworking the beef in patty making to grabbing it out of the package as is. Do you find it better for the smash to just kinda grab it?
 
Funny how the 1st pics (especially top left) look that way, but you did a good smash and presto - patties.

Double burger with cheddar, queso fresco, butter poached red onions with Thai blend and some toasted chipotle buns.

I like the whole no touching the meat thing.... my least favorite part of cooking is handling cold raw meat. Patting out well seasoned patties. That cold grease coating your hands. Takes like 5 tries to wash the stuff off... ugh. Makes the sensory processing go into overload. I got a giant bag full of purple nitrile gloves just for touching the ickies.

LOL... TB's not afraid to touch it it's just part of the smash process. If you form a patty and then smash, it's too tight. I thought he did a loose meatball but it seems he just ice cream scoops it for an even looser meatball.
