Are you a chef? Cooking with heat? Dish it out! Tell us your stories (good and bad), menu creations, etc.

No guests, search engines, or regular members can see in here. So talk freely!

Have questions for chefs and chef/owners? Ask!

(This was created so TB could tell us about his new job. But all chefs, please chime in!)

Speaking from experience as owners? Or just askeeered.

TB, I say do that burger joint.

former restaurant owner, currently self employed electrical contractor

As much as I like being self employed, sometimes it would be nice to just punch the clock and let someone else worry about taxes, inventory, bids, permits, licensing, insurance..........

Maybe I will, maybe not.

I had a good laugh just before I split this afternoon.

Dude: The health inspector just rolled up in the parking lot!!!

TB: So what? They're just rolling up to drop in on the new pizza joint 2 doors down.

Dude: But...but...we ran out labeling material the other day and none of our prep has labels!!!! CRAP!!!!

TB: Hahahahahahahaha....he ain't going to shut you down for labels ding dong. It's the 40 turkeys thawing in the cooler leaking turkey blood all over floor and out the door of the cooler that's gonna' kill ya'!

They were running around like a bunch of monkeys trying to bang a football.

Knuckleheads.

Are there any more chefs or cooks here?
I've done my time in several places, Sonny's Bar-B-Q, Kielbs Bakery Rest(Hungarian), Bennigans, Tony Romas(BABY BACKS), A wing place or 2, Swensons(short order cook) I even worked in Catering(Black Tie) cooking some crazy good stuff. Bennigans had some great recipes for Cajun and Caribbean dishes, authentic stuff I wish I would have saved some of them.

Signature dish Hmmm, I can't remember the last time I bought Bar-B-Q sauce at the store, I make my own all the time by the Quart or more. I've killed about 15 grills over the years, even the latest ones with all cast iron grates don't hold up cause the burners and frames always rot out, my last is over 5 years old, a new record for me.

Ha! I've eaten at Sonny's Real Pit and Fat Boy's, and use to try to decide which was better. I was always a Fat Boy's man. And their beans rock. Also, I worked at Bennigan's.

So we have a lot in common.

I stay away from any joint that has the name O'Toole listed as a menu item.

Don't remember. I was 16 or 17. I do remember a free employee meal which had things like corn dogs and cheap stuff, or 50% off the menu and I liked the French Dip and Monte Cristo.

My favourite Peter O'Toole moment was when he was receiving his lifetime achievement Oscar a few years back. He quipped that people complained that he looked so pretty in Lawrence of Arabia that the movie should have been called Florence of Arabia instead. I love it when people can laugh at themselves.

Omelettes are usually 3 egg affairs. Had a lady that wanted hers with egg whites only, which means to get the same size omelette as normally served you have to crack 6 eggs.

She ate her egg white omelette with 2 pieces of bacon, hash browns, a biscuit, and a side of white sausage gravy.

She probably had a diet coke with that too.

there are no calories in a diet coke float, the diet part cancels out the calories in the ice cream.

If you break a cookie in half or twist open an Oreo before you eat it, there's no calories, all the calories leak out.

If you eat a candy bar in the dark, there's no calories cuz you can't see them.

True Story.

Crumbs are calorie free also.
And if you see a strippers bung hole, you own her soul.
Unrelated, but true.

A fatboys pork sandwich is a thing of beauty.
And my drunk ass once spilled a FULL pitcher of beer across our table at a sonnys on all u can eat chicken night after playing golf (which means 3 holes of golf, 15 holes of happy hour)
