Cloning a Hot Sauce Recipe

So I realize that there are a million ways that this recipe could go down but I'm looking for suggestions on a good starting point for trying to recreate it. Doesn't need to be exact cuz I probably plan on substituting the habs for something else anyways but for the sake of keeping it as simple as possible, lets assume im using habs. Unfortunately I'll probably end up using canned peaches cuz all the fresh ones around here suck and have no flavor but everything else I'll try to source fresh. Any suggestions are appreciated. Especially if you've had this sauce and know the flavor profile. It's "Tears Of The Sun" by High River Sauces. Thanks!

Edit: If it's easier for you to list in volume measurements, then lets say for a 1 gallon batch. Percentages are welcome though.

Fresh peaches at markets are usually awful, I see no issue with canned for sauces, pineapple too (tho good usually fresh but Dole's in natural juice are great). I'd take issue with canned apples. :P

Close enough for what I was trying to acheive but noticeably different. Once all the flavors get to know each other a little more I might be able to put a finger on it but right now its hard to tell. Maybe they use more juices than raw ingredients? But consistency is near identical so im not sure thats the case.

Check out frozen peaches also.

Had this sauce with some tri tip quesadillas last night and it was bomb! I thought I would actually be saving some money making my own sauce but this ended up being an expensive batch.. I burnt up the ninja blender doing the second blend on it. Just got that thing a couple months ago too. My wife is not too pleased about that.

That would be a very controversial name. Some people wouldn't even buy it just because of name. You don't want to alienate any customers, better think of something else. ;)

Something less offensive...Like Satan's Taint.

I don't get my wings til i'm done with probation though. Which basically means, doing the exact opposite of what I was doing before..
