Had a craving

Like something a mom would make

Then It hit me

3lbs of a nice pork loin
1 lb of sliced button shrooms sauteed in butter and garlic
2 cans of Campbells REALLY low sodium cream of shroom....Yeah there really is such a thing. https://www.campbells.com/campbell-soup/campbells-low-sodium-soups/ready-to-serve-low-sodium-cream-of-mushroom/
1 med yellow onion diced
8oz of bone broth
Little black pepper and sea salt
A BUNCH of charred bits in the pan leftover from a steak. Used the onion and bone broth to deglaze that sheet

I made a trip to the slaughter house and picked up a roast with skin on for supper. I sliced off a slab to make chicharrones.

I set it on a bed of onions, garlic and carrots then blasted it at 500 for 30 minutes, dropped the temp to 350 for another 2 hours.
100-4649.jpg

Drained the grease and made a thick gravy with the veggies.

I peeled off the skin and couldn't stop eating, these came out as crispy as the store bought generic pork skins.

Served with roasted brocolli and cauliflower, Colemans mustard, a vinegar based coleslaw and mashed potatoes.

I woke up early and was wide awake so I tried to make biscuits again, they usually come out like dry bricks so I tried Alton Browns recipe and BAM!!!!

They came out nice and soft.

LOVE, Love, love homemade blackberry jam!  Also, a shot of blackberry shrub in an ice cold glass of seltzer can't be beat on a hot, humid summer day.
