Told ya tonight was Cheeseburgers..So just for the THP I went above and beyond..

My burger...Two grilled cheeses, a half pound patty of 80\20 (Seasoned with salt, pepper and my daisy cutter flake), 5 slices thick cut bacon, lettuce, tomato, mayo, ketchup and mustard..

Dear lord my heart! Nah it's good for the soul and the lettuce makes it legit healthy :D Definitely should be a drunk post :D
 
So since we don't have a throwdown what are you cooking today? 
 
For lunch I made some chilpolte chicken taco plates.

Took chicken legs and rubbed them with adobo seasoning and my private cajun spice and put them on the grill for a while. Then I took a can of chilpolte in a blender. Added mango pieces. 5 cut up dried NuMex chilies, cup of apple cider vinegar, salt and pureed it. Added a cup of water and put on stove to boil. Added the chicken from the grill and boiled for an hour and a half. Pulled the chicken from the bone, reduced the sauce for 20 minutes and added it to the chicken. 
 
Meanwhile, made some refried beans and mexican rice (1 can crushed tomatoes and 1 can rotel tomatoes, 1/2 cup of water, tsp salt; brought to boil, added two cups of rice and let it simmer till done).
 
Cut up and avocado, red onion, cilantro, tomato and a side of cheddar cheese.

Fried up some plantains for the side.
 
Put the chicken and other ingredients on homemade tortillas and voila'.
