food Fried Chicken

Did some impromptu KFC the other night. Really a spur of the moment thing so threw together some Flour, cayenne, salt, garlic/onion powder, paprika and lemon pepper for the breading and seasoned the chicken pieces in cayenne pepper, oil, hot sauce, S+P with some lemon juice. Being late at night and too many (or is it not enough?) beers in, I only had it marinating for like half an hour. I think I put a crapload of cayenne pepper in it this time, but still could barely feel any heat! Needs more time marinating me thinks, but as far as taste goes, I was happier with this batch than my previous ones.

Awesome looking chicken ,  the meat actually has texture to it.  Most commercially raised chicken here ends up with a mushy texture, you have to go free range or organic to get something with good texture for fried chicken. 
 
To be honest though the first thing that jumped out at me was the pic of the pot,  drunk frying with a full pot of oil  would   give me nightmares.

Yeah crust got too dark for sure but the meat was perfect. I will need to recheck the fryer for accuracy but I have found before when cooking in the cold it causes issues. The wings which are not shown has awesome flavor from the brine, thighs not quite as much. The crust was twice as big as the thighs so that part was right...to dark needs fixed!

That above is more or less double dip.Too much crust this time, going to go back to my normal methods lol. I blame those super strong IPA's last night
 
I do the single dip myself.  double,triple is to much for my taste. I read kfc does 7? probably why I hate kfc. :P    I go flour/seasoning,egg,then flour/seasoning. then I put it into the icebox for a couple of hours until the coating is no longer dry, it gets sticky. then fry.
