I just received this as a gift. Over $250 (retail) 10.6lbs of English cheese.
 
The grilled cheese wheels are already turning. The cranberry cheddar sounds interesting but atm im so stuffed nothing really sounds good. The Stilton probably is not gunna make the cut though but ive never tried it for grilled cheese.

Im at a impasse. The Wenselydale cranberry white is a rather large block of over 2lbs. Although it sounds the most interesting for a grilled cheese, i cant say i really want to open that much cheese atm. I tasted the Krystal Pure cave aged and its wonderful. IMO the flavor is a bit intense for a grilled cheese.
 
That leaves me with a Red Leicester which is rather crumbly and a layered cheese called V Majestic Cheddars. This one sounds like it might be more inline with my tastes for grilled cheese.

Im really more of a Havarti, Gouda, Edam, Tilsit, Butterkase ect kinda cheese guy when it comes to grilled cheese. Good double cream Havarti being one of my all time favorites. ATM i have no idea what im going to do with over 2lbs of Stilton. Blue cheese is ok but i like it mainly on salads. Ive read is delicious toasted open face on a crusty bread. I may have to try that.
 
On a side note if you want to try a really fantastic cheddar that is more affordable and available, the Cabot's Alpine White is truly exceptional for an American made cheddar. Cabot's description is spot on for my palate. I would rate it as one of the top three cheddars i have ever tried and the flavor is unique.

Ive tried 3 of their "Legacy" collection and many of the regular Cabot cheddars. The Alpine White really stands out from the rest. I have not found anything that tastes like it. The Kilchurn Estate Krystal Pure cave aged reminds me of it but only vaguely.
 
I love cheese, but I don't buy any of the exotic stuff. Do you guys have any recommendations for me to try. Somewhat affordable...I don't love cheese THAT much.

If you like cheddar, try Cabots. A 6oz block from the Legacy Collection is around $3.70. Most of the larger grocery chains carry Cabots. Ive tried the White Oak cheddar, Alpine White and the Farm House Reserve. All are excellent but the Alpine White stand out with just a hint of Swiss and Parmesan. Absolutey delicious even though its not what i would call a sharp cheddar. I thought the Farm House Reserve was also very good and it is sharp.

Grafton Village also has some excellent cheddar but its about twice the price of Cabots. Its also much harder to find at the larger chains. Its more of a specialty shop item.
 
If you like mild buttery cheese try:
Havarti...Danish is best but Finnish and Russian can be very good too...I tried a Russian havarti type cheese today called Rossiysky that blew me away.....Its was outstanding
German butterkaise aka butter cheese....this stuff rocks on a grilled cheese
Danish or German Tilsit....similar to havarti but to me it almost has a hint of Swiss too. Neither is quite the same as real Tilster to me has a stronger flavor/odor.
Edam or Gouda...both are very similar but Edam has less fat and i think it ages better too. Both are a bit firmer than the others and not as buttery. Great all around type cheese.
 
Harvati, Edam and Gouda are all pretty commonly available. Butterkaise and Tilsit you will have to look a little harder to find.
