I have to say this glog is putting out photos with spot on clarity, great looking plants, food shots  and info non relating to the pepper grow ...( which keeps this an interesting read).....Grow On !

Got my onion starter trays picked up today.  4 inches or so deep, perfect for the onions and enough surface area to spread out the seeds some.

I see you are getting ready for your onions. Are you planing on punching some drainage holes in those pots?
 
My OW are out growing their space.  MY shelving units in the grow room are 6 shelves high.  Currently the OW are taking up three shelves of 2 of the units and getting really close to needing a 4th.
 
Since I put the light over the top of the grow table so I can hold 30 1 gallon pots comfortably, I am thinking about moving the 8 OW that are taking up my shelving space there, and using the shelving space for more gallon pot ups.  I can hold 21 of those pots on a shelf.  This ups my room for gallon pots from 30 to 42 and gives me two more shelves for storage (gallon pot ups only require 2 shelves instead of the 3 for the OW).  Also have no height issues on top of the table.  
 
Plus, until I need those shelves, I can kill 4 banks of lights.
 
Got another remodel coming today I can see.

I'd do actually what you're intending to, move the ow's out and utilize the space for the smaller plants and the 1 gal. I've been that route in the past with over 80-2 gal containers plus many trays of 5" containers. I ended up moving the ow's to the floor and pinched the growing tips off. That slowed them down and prevented longer wimpier branching that would normally crack with the Spring winds and rain. I try to dedicate the most light to the smallest plants. This year no ow's for me and I'm a month or so behind from last years start. All I can say..it's been many less trips to the hydro store for potting mediums....so far....ha

This should be it on the peppers.  Hopefully the last tray doesn't give me any germination issues as I am pushing it a little bit.  March first still gives me 10-11 weeks until plant out.

I do too.  I don't have all the pot up info and such.  I really just need an idea on the germ times.  A later than normal start on my peppers that I will be doing this weekend will give me an idea of how they will look and do compared to my earlier starts in January.  If I don't see anything drastic different on these, I might as well save a couple months of lights and heat, not to mention time working with them.  But it is my favorite room in the house right now.

Finished with the final round of peppers.  I will be shocked if I am not seeing hooks by Wednesday.  I was thinking about putting my money on Jimmy popping first, but I have to go with Patio Red for the win.

And four varieties of onions are seeded.  Things could start to get interesting in the grow room now..  Tomatoes in two weeks.
 
Congrats on your beautiful plants Jeff!  Makes me wish I would have thought about starting some manzanos early as I did some chinense.  I've grown them in the past and they were great until July.  If I had a much earlier start it might be different.  I've got some Rocoto's from Semillas going, since Jan., but do not have real high expectations.  Will shade them and protect them thru the first frosts.
 
Like Greg/ Pic 1 says people start "shaving" them from their grow lists due to their difficulty.  I am guilty of this as well.
