I'm cooking a turkey for christmas

Or should I say I'm Jerking a Turkey, got the go ahead from the wife.
were going to spice rub the bird down, I have some pimento berry for the smoker and its going to haVE A PINEAPPLE AND MANGO stuffing. cooked in our hooded barbyQ
I'll keep you posted and will get some pics.
I'm pretty excited.
 
I have wondered about the DTJS on Turkey....I bet it will be delicious...

I was enjoying DTJS on turkey breast sandwiches last week - is excellent.

....still not as good as with fresh prawns though :)

I have to mention though....

For stuffing to reach a safe internal temp, the bird has to be overcooked. No 2 ways about it.

A digital thermometer is a must for turkey and pork, do the stuffing seperately.
 
yep I was going to make the stuffing separate, will be cous cous based.
Red onion, ginger, lime zest pineapple and mango.
maybe some sort of nut for texture?.

DTJS will definately be on the table.

I'll be having DTJS with some Turkey breast and prawns and maybe some Tassie scallops also on Christmas Day. does DTJS go well with Stella Artois??? I hope so because I plan on drinking about a thousand of them! :cool:
 
I'm just gonna go in hard I've done plenty of jerk chicken and lamb legs so I think it should be sweet.
DTJS goes very well with beer. Good recipe for dipping sauce
2 tbs dtjs
1 tbs cream
1 tbs greek yogurt.
chilli it right down and drag your seafood through it.
It is real good on prawns and and cold roast chicken peices like that.

did I mention I have 9 kilo of green endevour prawns for the christmas break....
 
we just ate 3 kilo
maranade
5 tbs sweet soy
5 tbs soy
5 tbs sweet chilli (get the thai style has a little mild bite)
5 garlic cloves crushed
2 tbs fresh ginger

mix marinate and cook in a real hot pan allow the sauce to reduce and burn on a little.
Its delicous
I didn't make them super hot as we had people over and the kids but for the chilli heads just add fresh chilli pods to required heat.

Its gonna be a great chrissy I got beer on tap plenty of food, the kids all are getting real cool presents
I'm actually really getting into the spirt of it this year.
 
My fave for DTJS & green prawns is to leave them in the shell. Cut an incision through the shell between the legs. Put prawns in a foil dish - coat with DTJS and cover the dish with foil.
Cook on the rack of BBQ with hood down until pink. (couple of minutes in a hot BBQ)

I got some 10 20 size green endevours from a mate who was a cray diver in the Torress strait.
so I cooked some for chilled nibblies

I'm going to be putting on some weight over the next few days .......
 
I had potatoe salad and corn as well lol.
Big frigging Birds Turkeys they have so much meat on them I'm fairly unfamiliar with them before yesterday.
