But I was pretty much Honolulu/Waikiki.
 
None of the local joints I went to had chile water.
 
Or any other local hot sauces.
 
Having said that.
 
I didn't even scratch the tip of the local cuisine.
 
I'll tell you this much.
 
I loved ever meal I ever ate in Hawaii.
 
From local to resorts.

Ive got a nice slab of beef cooking really low atm for my take on birria tacos. Changed the peppers up a bit.....ok ok i used beef instead of goat so its not really birria either but i aint wasting good goat meat on tacos :D
 
I used some fresh ripe Big Jims, Aleppo powder from my pods, a little ancho and a couple aji panca i dried to replace pasilla. Blended the snot out of the dried peppers and some stock. The onion, garlic and fresh pods will melt away to nothing in 5 hours. Tempted to add some green Big Jim, Famers Market or Sandia select near the end too.....Oh oh oh sauteed on the side with some more onion!!!!

Sauteed the peepers and onionz in EVO with salt/pepper---- 1 Big Jim, 1 Sandia Select and 2 Farmers Market
