I think you missed a step in the spatchcock...not laying flat...

Mine whole chicken is also organic and you can 100% taste the difference!
I assume you mean me. You may be right. Need to go put more pressure on the breastbone.

I usually shop at whole foods or a local butcher. A big, new beautiful Giant Foods just opened a block from me. Won't usually buy their meat or poultry but this one has the Bell and Evans chicken and lots of D'Artangan sausages and duck. Seems wierd cause their store brand meats still look sad and scary.

Can you explain. Top photo taken from my camera roll on iPad...sideways. Bottom photo is the same photo from camera roll on iPad, but uploaded from imgur.

Is it that you have to have iPhoto installed on iPad or iPhone for pics to be proper orientation?

If perchance it uploads sideways just edit the pic first, maybe you want to enhance colors anyway. When you save it, it will save the orientation.

See devices these days have orientation sensors, and the actual orientation saved to the image is different than how it displays on your device. It's a "smart" feature and embedded in the image. Some hosts detect this and some don't. So if they don't just edit/save.

Nope, breastbone is snapped. It just has big boobs.

It is great on a turkey as well but a larger turkey requires a large surface! I am thinking tonight will have to be beef tenderloin since I bought a whole one and butchered it...poor me :) The chicken should be thawed for tomorrow

I will still take pictures but this video is timeless
good video, I also  like to pull out the wishbone and pop the thigh joints first  before  spatchcocking.. not necessary steps but it helps to it lay flatter and with serving.

Alynne - very cool, have never seen that technique ... must try it! =)

WaffleBum - last time you showed me (my grilling thread) steak, you left off at brining ... lol.

What's funnier yet, is that both of you do that!

CHEERS!

Hell if I had known this was going to carry on for two weeks I would of done something a little more interesting with my duck turds. I though it ended on memorial day

Don't feel bad - I'd put the shit back in the pantry-room when the thread remained locked the following morning, LOL.
