It can be cornstarch, it can be sugar and baking soda (I think I've seen), and other concoctions ...
 
All I know is that when it's done right, the meat is awesome, and when the velveting is done wrong - it tastes like buffet food =( ...

You have to use that wok like G would. Flip it upside down on a gas burner and turn it into a proper crepe maker for some chocolate crepes with Benton's bacon and 5 kinds of spices, duck fat the top, sprinkle with powdered sugar, and Searzall it until caramelized. Boom.

Ok first of all, I do not make crepes.  Second of all, I do not own a Searzall unless you count my propane torch, the blue one.  Nope, not gonna happen.  Velvetting, hmmm... if memory serves it is corn starch egg whites and rice vinegar no?

I haven't done it yet, but I believe it can be as simple as just a little cornstarch ...
 
The wok can go in the microwave silly.

I just wanted you to know I hadn't washed off the coating they have on them to keep them from oxidizing or whatever in storage ...
 
Mine also has the coating ... because I used neither =/
 
I will be using it, though, now - it really requires the gas burner ...
 
The 0-100, no brakes cooking in the CI wok is just - different ...
 
Just use it on the gas grill.
 
Glass top, no place for a wok unless you just want to set it down and not move it which is not how you wok cook. You're in the doghouse if you even go to grab that handle lol.

I took a shower and came back and and you guy's are there ... this ^ is what I envisioned.
 
Ann, while you are at it, I want you to figure out a price for me for one of each of your line, save the PE and the Southwest seasoning (GM just sent me one).  Hit me up with a PM, I want to place an order.
