Every day for 7 days feed bug by adding 2 tsp ginger and 2 tsp sugar. Shake to combine and keep closed. I use a quart mason jar.
By the 7th day the bug should be bubbly/frothy and smell good.
Once you have your bug after the 7th day start the batch:
Dissolve 3 cups turbinado sugar in 10 cups boiling water. Once dissolved add juice of 4 lemons, and a gallon of room temp water (I use purified). Allow to come to room temp. Carefully pour off liquid from bug (if you get some of the sediment it will be a bit cloudy like the above pic - not a big deal imo) and combine with the lemon juice/sugar water. Mix well and then pour into bottles like the one pictured. Use a funnel! Allow to rest for 14 days, then refrigerate and enjoy.
Note: for extra carbonation add about a tsp of sugar to the bottles before the ginger ale is poured in. Use high quality bottles or plastic soda bottles - cheap glass can explode, which is a major bummer.
Final product is a bit tart, sweet and amazing - a complete departure from Shweppes!!
