Actually,

When a sourdough starter separates the clearish portion called the hooch is where the LAB are. This is what I have used to start many a pepper ferment. The yeast is in the doughy portion of the starter. If your going to use it for a brew you'll want to make sure it's well mixed up before removing a portion.

apparently the contractors left at noon, and no one was there from 12-4ish until i stopped over
 
no notes or tags saying it was delivered or missed, and i wrote a note to call me when the delivery guy gets there, but got no phone call, so no idea whats going on
 
can you check the tracking number and see if they updated anything
