There is a block of ten year old extra sharp cheddar in there! :shocked:
 
And some delicious peno cheddar I'm munching as I type, as well as some others.
 
Really excited bout the ten year aged though. I think the oldest I've had previously was 5 year.

So not only did he make various awesome sauce, but he made these with pods i sent him :party:  so it's even that much more special :D
 
Near the end of last year i had an abundance of pods, and asked him if he had time or was going to be doing any saucing soon. could he use them ?
 Well he fermented some, and did his magic with others, and now i even get to try them  :dance:
 
 Test Batch # 18 SUN BURN pairs Scotch Brain, Dulce Sol,Berry Amarillo,Trinidad Cherry Yellow,and Aji Jobito peppers with Pineapple and Citrus Fruits, and a touch of white wine vinegar to round out the finish   Heat Level 7/10

Test batch #19 Rough Rider is a deep amber, almost cinnamon colored sauce made with several Superhot Pepper Crosses, red Rocotos, walla walla onion, garlic, and finished with some raspberries and cane vinegar Heat Level 8/10

test batch # 20 After Midnight is a wonderfully hot and smoky combination of Pecan smoked roasted Yaki Blue, Poblano, and Chipotle peppers, fresh blackberries,apple cider vinegar,onion,roasted garlic, and piloncillo sugar, Slightly sweet to start, then a creeper heat kicks in, heat level 6/10

and a peach Habanero one that didn't have a description

The "TB12" Goat Pepper sauce stirred much controversy, given the upcoming Superbowl haha  Great stuff!! 
 
In edit: sorry for the hard crop on the pics, stuff on my desk (found in photos) would land me on the "Former police officer...." news blurb.  Not a professional review but have to mention that the "Original Recipe" sauce is smokey with about as much heat as I could stand. Great sauce, great flavor, BBQ like, with immense heat. The Bajan sauce is also good, very unique layering of peppers, great flavor with a most bodacious heat that lasted quite a while. The "TB-12" was great, distinct flavor and subtle heat. Thanks again "Iron Mike" on behalf of myself and a number of others.

to send a package like Mike has with international shipping which cost him a fistful of $$$ shows his generosity and 100% stand up guy we all know he is.
I was not expecting the haul he sent and asked me to share with John (Trident) who is also here in the UK.
I was only after a hook up of Chocolate Bhutlah DM to compair with the one by Steve M. :shocked: :crazy:

The cappuccino SB flakes we're a great combo sprinkled on poached eggs yesterday, and the hot salsa is super hot great crisp very fresh flavour, and leaves a warming glow. My jar won't last long buddy. :lol:
The labels on Mikes sauces really do stand out and I will give a honest review when I try both.
Mate you have not only stepped up at great cost to yourself, which I know must of been hard while your still recovering from your back operation.
Your kindness will be repaid bro, expect a Simmy care package with some fruity condiments [emoji6].

I found that pic online a couple of years ago, and already had the label (minus the full ingredients list) thought out before I even made the sauce, haha. I've been getting pretty good feedback on it though, so maybe I should make another batch

I'm aware ;) The sauce was made with Bahamian Goat pods, with a play on words of Brady being the Greatest Of All Time QB. "G.O.A.T." Although, looking at it again now, I could see where the confusion may be. "Bahamian Lamb" sauce just doesn't have the same ring to it, lol

I'll tell you what, whoever's got the patience to make a ransom note longer than that deserves to keep whatever they're holding, hahaha (kidding!). I wanted to make it much longer, but I had no idea how long just that little bit I did would take! ;)
