Pepper People are the Best

Another amazing package from by bro Jamie!  Can't thank you enough my friend.  Pepper People really are the best.

Fancy meeting you here. Just got home to a box from buddy. Haven't opened yet,will after shower. But I can imagine I'll be chomping candied jalapenos in about twenty minutes. buddy you rock! Thank you so much for generosity.
Ok opened box. Wow! Candied jalos,the best taco sauce in the world and three bottles of different ferment sauces.

If you are making sauce you can:
1- Freeze your peppers until the bottles arrive and then make the sauce.
2- Make your sauce, refrigerate until your bottles arrive, then reheat the sauce to bottle.  This also give you some extra opportunity to tweak your sauce a little - nice to do that after it cools a while and taste it again.

I prefer this method I think allowing the sauce to sit for at least 24 hrs in fridge then heat and bottle allows flavor profile to meld then just a quick tweak to get it perfect while heating for bottling.

Almost all my ferments are from frozen stock. Nice job cone9!! :)

Rocket sits aging in the fridge for 28 days before I reheat and bottle.  The extra time allows the vinegar tang to mellow and the peppers to come forward. ;)

I seal mine in a #2 mayonnaise jar on Funk and Wagnall's back proch.

Save seeds from the champion and bolsa de dulce. There's several phenos of the bolsa I labelled the pumpkin and a normal one. Use seeds form the bagged champion to retain. They look a lot like the pumpkin pheno. 
 
Extremely tasty pods and almost zero heat. Great for everyday cooking peppers. 
 
Hard to tell the tepin x lemon drop and inca berry apart as well. 
Lemon drop and aji pineapple identical too

Hey D3 any suggestions on the Tepin x lemon drop 10jcw10tc and I have these growing have picked quite a few.
Any recommendations for use. Thanks brother! :)
 
I decide that later on I'm going to pull the singles I'm using for seed saving, and then we're going to clean the de-stem and cut the peppers - but I'm going to freeze them before I use them, because I know how they defrost and I'm thinking the blendability of having been frozen will outweigh the taste benefit for being fresh-never-frozen ...
 
I actually don't have a blender right now, so I'll be using the Cuisinart food processor and a stick blender, I guess.
 
That'll be mid-week ... today's for brewing.
 
So flooded out, that I can't really leave the house.

not really, mine don't have any heat really and taste isn't worth growing again... Maybe in a salsa or something?
