Lobster bisque, I spent hours on this WHILE I was making pizza! Gotta get it all in on one day off. This is four lobsters steamed, cooled, and picked, homemade stock made with the shells onions, carrots, celery, tomato paste, lemon, and garlic. Strained, then chopped celery, onion, carrot, thyme, parsley, tarragon, and sherry, Added heavy cream, and a corn starch slurry to thicken and simmered until just right. BOOM!
I am eating leftovers upon leftovers upon leftovers. The pork is gone, as are the Swedish meatballs, there are two slices of pizza left, two servings of the catfish etoufee', and more than half the pot of bisque. All that and a 30oz steak thawing out for another grilling session in a day or two. Wait until you see this thing! I am marinating it in a Brazilian marinade.
