I couldn't figure out where to post this stuff and didn't want to inundate The Drunken Chef, so I figured I would start my own thread for posting my foods, hot sauces and other creations.

Yankee Enchiladas filled with, yep, more pork, tomatoes, onions, peppers, chiles, rice, and cheese.  Topped with Ranchero sauce, moar cheese, and black olives and baked.  Then topped again with sour cream and salsa verde.

Once again my pics suck, even in good light, not sure what is really going on and right now I don't care.  This is two farm raised pheasants with a chile rub, roasted cabbage and yukon gold potatoes with cheddar cheese and an Asian salad with ginger soy dressing.

I tried again with something dark in there to balance out the white and it worked.  Better pic of my pheasants.  They are delicious btw.  A lot like the free range chicken I got from my brother last year.  I lucked out and cooked it perfectly without a thermometer.  I just poked the thigh with a toothpick and saw the juices ran clear when I pulled them.
