I know y'all cook up some great steaks so post them up in here....

You guys need to try a top sirloin cap with the fat cap on but trimmed lightly. Aka culotte aka picanha.Have your butcher peel the whole thing off. My favorite way to cook is whole on the grill. It plumps up like a small roast, amazing. Another way is to cut steaks and with some twine form them into fillet shape and wrap with bacon.

Favorite steaks would be top strip loin,culotte,porterhouse

Favorite cuts of beef, eye of rib roast, the whole chuck flap, mouse muscle

You might want to cook that steak you brined in my grilling thread this weekend, should be right in that 28-45d age window, lol ...
 
mrs. blues is home after a week on 'bidness in Hotlanta.
 
She's pooped.
 
But then I work 8am to 4pm tomorrow.
 
I'ma pick up her favorite prime filet tomorrow for date night and sear it on the flat top.
 
And I gotta' say...
 
Open fire, be it wood, charcoal, or a broiler is awesome for a steak, but...
 
Cast iron or the flat top is what I like to liking the most.
 
Beaucoup crust without the bitter burnt' carbon flavors.
 
 
Trust.
 
So I'm thinkin' I'll pick up a nice prime filet for mrs. blues while at work and rathole it until I get off.
 
Then I get the notion I should call her and let her know not to make other dinner plans.
 
"I don't feel like filet. The team and I went out to this steak joint 3 nights in a row."
 
"I'm a little burnt out on filet."
 

 
That's the text pic she sent me the other night.
 
Now she's not hungry or feeling well.
 
So much for date night.
 
Looks like I'm having "quinoa tacos sitting on my left hand until its numb thinking its someone else date night".

Yeah...
 
After that phone call I put the filet back in the case and was thinkin' I might do up some skirt steak.
 
Then I reckon'd I'd get the skirt tomorrow night as I have the day off on monday.
 
Fact is, and I hate to admit it, these days I eat so little meat that when I do I need a day for recovery.
 
Seems it digests too slow for my system that is more accustomed to a high veg and fish diet.
 
But skirt it will be for tomorrow night. 
 
I'm dyin' for some fajita's.

Likely a quick tequila lime ancho garlic cilantro marinade and then onto the flat top.
 
Not a for true grilled over coals fajita but close enough for rock n' roll.
 
On a side note...
 
Some of the best skirt steak I've ever had wasn't mine.
 
It was one I bought that Jay seasoned and grilled on my back porch.
 
It was 'posed to be fajita's but it never made it off the cutting board once done.
 
We cut it up and pie holed it right there like cheap 70's porn.
 
Boom chicka' chicka' wah wah.

I aim to be at yer house the next time JayT is in town.  I will eat of the missy lou bowl, and drink of the tequila.  Shortly thereafter I will play of the bass whilst you and Jay sing some of the chingadera sheet.  So it is writ, therefore and whatnot.

If I told you how much sheeit we ate and drank, you'd never believe me.

I was almost taking my pants over my head drunk but not quite.
 
And even after that, Jay went and party'd s'more with his friends on The Strip of the big dry ditch.

That whole day is a crazy blur.  I remember everythang from your casa, the booze warehouse with the shopping carts, making a mess of your grill.  Some crazy ceviche, salsa, and the best queso cheese dip ever (thanks in part to AJ) and a mountain of bud light boxes in your garage.  I also remember Mrs. Blues being a great sport about it all when she came home and drove me back to the strip.  That is where I lose all memory.  I think I napped for a bit and then went back out on the strip until something like 4am.  I was supposed to help set up at the trade show that morning, but I spent most of it lying on the floor and in the bathroom at the convention center.  Ahh the gold ole days!

No the knife was real, they were out of regular forks by the time I got my steak.  They cook them about 50 at a time on a pit.  I like mine R/MR so I pretty much cook my own after the initial masses get theirs.  I was at a party at the club I belong to.  
 
For a moment there I thought I'd downed another margarita and somehow didn't know it. Perfect steak there, J!
 
Not as purdy as yours and onliest one bite left, but it was tasty:

Picked up a pack of bacon-wrapped petite sirloin steaks on skewers from Target of all places. Didn't think to snap a pick until the last one was purt-near gone.
