Saturday night meal for me and my bride. Nicely marbled dry aged Wagyu Denver steaks, perfectly cut by my friend at our local beef store. Salt and pepper rub but I forgot the butter. Oh well. Cooked to rare, they were about as chewy as the warm butter I forgot to put on them. Excellent chow for $8 each.
 
Next picture the Sunday budget meal. Dry brined overnight with salt and pepper, then smoked with red oak and some charcoal to 200°. Falling apart tender and squirty juicy. This hunk of pig cost $1.54 per pound.

Porterhouse steak with chips (no, not fries :rofl: ), corn, and side salad topped with my Scotch Bonnet olives. Chips were sauced with Clearly Guilty, and steak sauced with Aggravated Assault.

New York Strips tonight seasoned with a local steak rub and splashed with Dales sauce before it hit the 500° charcoal pit.
Veggies coated in EVOO seasoned with Cavenders. Zucchini, sweet bells and green onions. Green onions are my new favorite to roast!!
Steamed potato in the rice cooker with all the fixings, almost?  I forgot the cheese and bacon bits.

Here's my action shot, green onion, potato and steak cooked a little too much. The only thing missing is a strong horseradish sauce and au jus.

Things got a bit sideways after my wife broke open a new bottle of altos plata olmeca. Triple threat plate coming at ya. Wings, poppers and steak plus a tater cause you need some veggie for a balanced meal. ;)



Trip tip soaked in a fresh wiri wiri sauce for about an hour, then hit with some homemade steak spice.

Prime grade, dry aged, grass fed Wagyu NY Strips rubbed with pink salt and black pepper. It's radical when the warm buttered steaks hit the 550° F+ cast irons but after 5 minutes of cook and 5 minutes of rest, these are beefsteak heaven.
 
The pups love it when dad cooks steaks in the cast irons.
