For one thing, I didn't put anything red in the sauce... just mangoes, orange habs, sweet white onion, ginger, dried spices (including turmeric), honey, cider vinegar and sherry. The fresh orange habs were plenty bright in color. I got the mangoes at the supermarket when they were still hard. I had to soften them in a paper bag on the windowsill. Even then they were more yellow than the orange-salmon color of tree ripened fruit, and lastly the turmeric powder... turmeric is what makes yellow mustard that particular shade of yellow, so that's the biggest culprit I suspect.

I asked the same question earlier this year, and the unanimous consensus was yellow Trinidad Scorpion or TS 7-pot yellow. I've also heard good things of the yellow-orange Aji Criolla Sella, and it has the advantage of doing well in relatively cool growing temperatures. I'll be growing both next season.
Yellow Brains. Very hot, but not as hot as the red variety. Very tasty, but not like a Fatalii. Any yellow 7 would probably be similar, but the Brains look cool.
Stefan I am kinda late to voice my opinion, but people have added some great varieties to chose from. It depends what your looking for especially since you said any heat, but I would go with the TS yellow from the ones I have tasted. I grew the 7 pod yellow an amazing and productive plant, which variety are you growing 7 pod yellow or 7 pod yellow XL. There are so many yellow that I constantly has me adding varieties. I have the seed collecting problem too. Pepperlover has some great stuff and she gives good freebies. Just finished sowing for this year and I have about 90 varieties growing. About half of what I have in stock. I could grow as many types next year and have completely different varieties without buying anymore.... of course that's not what will happen
