Oregano
Sea salt
Black pepper
Cinnamon

I forgot to tell ya'll....this will be a comparison between SRF kurobuta spare ribs vs. some store bought pork back ribs.

SRF on the right...cheap ribs on the left. I cut off a ton of fat from both. An hour and a half in and they look nice.

Nice . Perfect for my house. My wife is the real rib fanatic but she leans baby backs where as spare ribs are the only thing I think are worth my time cooking.

Just stoked the fire back up and threw some more pear chunks in. Been staying pretty consistently at 225. I believe that I've finally mastered the kettle. I dusted with some more rub about an hour ago. The bark is just coming on ATM.
