Nice pics Terry! How does the Locato taste to you?

I have not had many rocoto/manzano and I really liked it.  It was thick walled, juicy and tasty.  It had a nice mouth burn that lasted about 15 minutes for me.   I hope I get enough of them to make a sauce or a puree.  Devan sent me the seeds and I am grateful that he did.  It definitely makes next years list.  My Lima Market and San Isidro are flowering like crazy, but pods are not setting for me.  I assume it is because of the weather.

Yeah... the Lima Market clone he sent me a year ago and I over-wintered isn't doing more than flowering here as well. I tried to get Locato started from seed last year but had no luck. I'm glad you were able to get one to take. So far the only Pubiscens varieties I've only tasted are Orange Manzano and Red Rocoto. I had a 3-year-old Manzano plant I let go to grow the Lima Market, so it was a disappointment. If you save seeds from the Locato make sure you let the pods fully mature before extracting them. It takes them so long to ripen up it's a temptation to pull the pods before that point. Cheers!

Here are some processing pictures from the last few days.

2 gallons of fermented pickles...they are a day into the ferment and I will let them stay for 2 or three more days.

1/2 gallon pepper ferment using Smokenfire's recipe.

Really liking these tops.

Lastly some pickled Mystety Citrus...I has heavy handed with the spices...and some mixed jars of pickled peppers, cukes and carrots.

The dehydrator has been running for 2 days straight. I am finally seeing the bottom of the pile, until I go pick more.

Did I post those tops? ... because I have some, but I really can't remember why I bought them ... and only assume it was for beer experiments because of the name ...

LOL

Yes. They just replace the airlock. They can be used for small batch brewing, but I bought them for fermenting stuff.

Awesome grow man, I could totally go for some of those pickles right now. Muchies, man! Your plants look great!
EDIT; Just realized I already commented! Damn, I wonder how many times I've double posted on glogs?

That MW's are on point man and look amazing! So happy they are growing true for you.

Looking good, Terry.

You've been busy. Pickling looks good. That ferment looks amazing. I haven't tried the ferment yet. Need some fresh pod's. I've been making purée out of my frozen pod's. I'm hooked. On my second batch. Im running out of room for the powder.

Those Mystery Wine's look fantastic.

Good luck with the kitchen projects.

Thank you. The MW are a great pod. Right heat and taste for my saucemaking projects.

I am still using the seed from a couple of years ago that you sent me. I stink at isolation and have been unable to get ISO pods.

Thanks Chuck. If you haven't tried it yet. Smoke the pods before you make them into puree. Works fine on frozen pods.

Nice Goats!
Thank you. I lost a whole branch because the weight of the pods snapped the branch.

I did a bit of taste testing tonight. Peppers stuffed with farro. Pretty bland but I wanted to taste the peppers more than the filling.

Clockwise starting with the green pepper.

Farmers Jalapeno
Aji Jobito
Seed packed said Green Hatch, reminded me more of a Fresno
MOA
Aji Rosita
Yellow Jalapeno
Aji Margariteno

All were pretty good except the Farmers Jalapeno. That will not make the cut next year.

Wow!

I've been busy this week, and I see you have been too!

Processing is half the fun/work ;)

Glad to see a nice harvest up your way. The garlic, take one and cut the top off 3"s from the bulb. If it's still green it has a while to go. This year I had to move mine inside to finish drying. To much humidity out there this summer. So when mine were still green at the 3" mark they hit the extra table under the ceiling fan. I cut the roots when the tops were done drying. You will develop a feel for when the tops are right as time goes by.
