I deep fried the oysters. I baked the poppers. I ate the habs....I think I burnt my face off. I thought I was a little drunk earlier but I am most assuredly sober now. Ate 4 of the hab poppers and they lit me up like a pinball machine on 220v! I fu@ked up too, I should have eaten the oysters first but nooooo...I ate the hab poppers first and now I'm gonna' pay for it!!

A-okay now....while these were the hottest habs I have eaten, and I love the heat, I loathe the milky-chalky flavor the habanero's give off. I don't get that flavor when mincing and cooking but only with whole habs, raw or in popper form. Do other hots and superhots have this same flavor? I can't stand it.

I admit to not liking oysters/clams all that much...but I'd never taint da Poppers by admitting it in combination w/ Peppers. ;)
 
Hey ya'll. I had a bit of a conundrum last eve. I had some fresh picked habs and peno's and wanted poppers, but whence going to the hippy joint for a few ingredients (goat cheese) I found some awesome looking oysters. That got my crave on for deep fried. These were Goose Point, Willapa Bay, WA oysters. Big. Meaty. So what to do? Oyster poppers? Nah...doesn't work. Okay, deep fry the oysters and do goat cheese poppers. Then the problemo. As I was going to eat hab poppers, i didn't want to do that on an empty stomach, so easy peazy...fry the oysters first. Wrong. Tainting the oil with oyster flavor with poppers would be blech. Alrighty then, so bake the poppers. Only took me about 5 beers to reach that potentially life changing decision...

And so we began...

For the oysters..drained, seasoned, dredged in flour, eggwash, and then breadcrumbs. Rest for 10 minutes and then into the 375 F oil in the dutch. Lots of tartar, capers and limes on hand.

For the poppers...halve and seed the chile's. In a mixing bowl goes the stuffing, goat cheese, 4 cheese mexi-blend cheese, garlic, shallot, green onion, pequin's, sun dried tomato, olive oil, sea salt and fresh cracked black pepper. Stuff the chile's and then into the freezer for 1 hour, to set. Once out of the ice box, dredged in flour, eggwash, rolled in bread crumbs and then into the cast iron and oven at 400 F.

AWESOME!! The habs melted my face! The oysters were super sweet and clean! I could have eaten another dozen!

Aaah more seafood mayhem tonight. U-12 freshwater prawns, huge scallops and double fried oysters. Lots o' limes and 'hawt horseradish for the cocktail sauce. i got's dat' fryin' feelin'. Maybe some fried pepper rings too!

To foo or not to foo. That is the question. Sometimes I pity tha' foo...

With all due respect (and much respect it is) at your Throwdowns...I think your best stuff comes as a drunken chef!

I smell a "Anything goes but you must be drunk" throwdown in the future, with you as the frontrunner!
Those oysters were huge! You could have harvested pearls from those sonofabitches.

Blues kitchen alive and well. Well done, amigo. Good tequila, btw, I only use that 100% agave stuff on tequila night. Thanks for the crushed crap beer can. It put me at ease when reading your post.

Much obliged and the Drunk Throwdown is an excellent idea, however, you and Sum may have the advantage. I know damn well you drink like sailors on payday! As you know I stole the drunk "can" from ya'll. It is now a permanent fixture in all hot blue and righteous pics. I tip my hat to the Florida Posse!

'Lawd have mercy! I've created a monster! Drunken Throwdown could get ugly. Thousands of lives may be lost and may cost millions of dollars. A run on the liquor stores could cause a nationwide panic. Divorce papers will certainly be involved for some. Sounds like fun!

TB, that was some great looking vittles there. I haven't has oysters in quite a while. I was laughing when you said about the foo foo with the parsley and there is the crushed Bud Light in the background. I don't think Bud Light and foo foo are a match. :lol:
 
Ah yes chidren's...the chaos never cease's in the Blues Kitchen. I picked up some prawns and sea scallops, breaded 'em up and deep fried. I had leftover fried oysters from the night before and rebreaded and deep fried those too! Call me kooky but the oysters rocked harder than the drum solo in Ina-Gadda-Da-Vida. Crispy crunchy oyster goodness.

Cut up some fresno and 'peno rings, dredged them in flour and into the dutch. They were okay but need a beer batter. Pickled rings would also be better....

Check out the size of those scallops! Like brahma bull cajones ya'll! NOTE: I broke my own rule of using paper towels for the drain field due to the fried peppers as they would fall through the wire mesh rack. Never allow fried foods to sit on paper towels!

Whaddaya breading them with TB? Panko? Cornmeal? Looking good. I had a contribution to this thread, but the camera didn't cooperate. I just made a Magherita Pizza with my own vine ripened heirloom yellow and red tomatoes and fresh sweet basil. The only picture that uploaded was the before pic. Sorry. I guess I'll post that anyway. The pizza was simple and awesome!

Like I said, the after shot of the pic didn't transfer, so this is all that's left. A slice and a mini boli I made with leftover dough, mozzarella, turkey ham, spicy ham, salami, pepperoni, and a basil leaf.

I have to admit that no booze was consumed during the preparation of this meal, but I am still drunk from the party last night. Does that count?

The foo foo and the "drunken can" were inspired by the Florida Posse (Sumbits, FD4,5o). The can and their brand of foo was brilliant and utterly priceless! That and that damn banana leaf 'thang. Just be glad I didn't dress up in clogs and a skirt to go all out frenchified foo foo.
