Paulky, almost all the bottles in your place look unopened. Are the ones on display around your kitchen/home just for show? Where do you keep the ones you use?

Also, if a sauce lists "vinegar" in the top 3 ingredients, I almost never refrigerate it and have never had a problem... do you think that's safe? Maybe I should stop.

That is a judgement call....but if the bottle doesn't SAY "refrigerate after opening" you can assume a) it's okay to leave on the table....or b) the person that bottled it was an idiot.

Jalepeno/Red Potato salad and Brain Strain burgers coming up later on. I've been remiss not posting.

So... as far as most hot sauces... what do you do? Not open/try most of them? Do you buy doubles of everything?

As you probably already know, the vast majority of my collection consists of rare and collectable bottles....which are either too old to consume, or never meant to be opened in the first place. A good bit of the others are novelty bottles with a vague collectability and probably zero flavor.

The truly good sauces, I'll buy more than one so I can enjoy it...and if it turns out to be wonderful, I will keep on buying it. But, like I said, the superhot powders have my undivided attention at the moment. They're pure pepper flavor and go a very long way.
 
Paul that is not a pantry, that is a hallway to heat heaven! Great googily moogily! And, I would so love to grub on that brunchiness. The only way to improve on that would be to mix in some of TB's smoked salmon.
