Dang it man!! Im sitting at work and got caught licking my screen. Scovie, that steak and fish look amazing!! Whats better than meat and potatoes?...... Meat and meat. Sum, it's crazy how you can make a simple sandwich look so good, and Grant, not sure what that is but i would tear it up!!

I'M HUNGRY!!!
 
So ... I'm planning to hit the fish market because of SD ... I've never cooked fish in my life ...

I hear a very thin coat of mayo is uber protective, and you can wrap the fish in parchment paper ...

I think I'll get some grouper because it doesn't make me want to gag ...

Suggestions beyond this?
 
Grouper, Halibut, Mahi, Waho are some of my favorites along with Rockfish and really fresh Tuna. Most fish are super easy to cook especially the steak variety and a little reading and practice. As for seafood, I am doing Jumbo Lump crab meat Fra Diavlo from scratch over fettuccine with some DFH Punkin.

I can't believe someone who lives in Florida actually admitted this.

Forget the mayo... and the parchment. Get yourself a fresh fillet of whatever and throw it on a plank of cedar wood. You should be able to find that in the grilling section of your local Publix. Top it with some sea salt and some fresh cracked black pepper (sorry Geeme). Toss it on the grill until the fish starts to brown a little. It's done. Maybe some fresh lemon to squeeze on it. I like my fish simple. Grouper is perfect to work with if this is really your first time with fish.

Cedar plank?

Thats yuppy crap.

Get a piece of fresh fish.

Season it and dredge in flour.

Slap some butter in a medium hot saute pan.

Saute the fish, flip it once and then hit it with a shot of white wine and the juice of one lemon.

Pull the fish off when its 3/4 done and plate it.

Reduce the butter lemon wine sauce and then splooge it over the fish.

Done.

POW!

BLAM!

Sex on a plate.

I really got hooked on Rockfish last Winter.

If it had been a really long work day I would usually nuke it with garlic salt and lemon.

Wait, Rockfish? What kind of fish is that? Here, they refer to Striped Bass, or Stripers, as Rockfish. You don't have them in WA do you?

Beats me! It's just an inexpensive white fish they label as "Rock Fish" and I like it! Almost buttery when I cook it right.

So when I cook it right means... when you set the timer just right on the microwave? Maybe instead of HI cooking it at 70% power? Trying to understand here.
 
Almost stopped for some today - will this week for sure ... it's time to give it another shot ... the entirety of my fish trying at home was mom's flounder on occassion growing up ...
 
LOL JT! By "right" I mean poaching it. That's my favorite way to cook it because I HATE grease splatters!!!!!!!!

A little lemon, a splash of white wine, a tight fitting lid...bam!

But seriously, if I nuke it, it's covered in vented plastic wrap, on Hi, for maybe 3 mins. Too simple. ;)
