Oh noes! mrs. blues has hijacked The Blues Kitchen and making cookies for her girly girl office soiree tomorrow night. Usually looks like a tornado tore through a trailor park when she gets done....
Anyhoo....last nights mayhem and chaos was my own te-mexified Taco's Pastor. Not having a vertical spit with half a hog on it, I got some pork tenderloin, sliced it thin and cranked up the cast iron on high. Seared the pork in a mix of olive and canola oil, tossed in pequins, garlic, onion, crushed pineapple, cilantro and a splash of cider vinegar to give it the old yin/yang on the sweet/tang. Slapped it on a tortilla and good 'Gawd ya'll! Madre y Padre y Espirito Santo....fantastico!!

Cooked it down, added a few splooges of chix stock and reduced to get all the caramelized goodness...
