Wow this was good reading this morning. Nice work everyone. I am going to be doing some cooking today. I have some country-style ribs and some deer steaks marinating, and Mrs. JayT has requested a pot of potato soup, so I think I will make some beer, jalapeno, cheddar, broccoli, cheese, soup. It is going to be a full day, stay tuned.
 
I believe Tim and I (Retta too if she's inclined) are going to go to the local sports bar today and watch the Jets embarrass the Colts. I can't get networkTV out here in BUFU over my satellite dish w/o paying $4,000/month for it and I wanna see the game.

Gonna drink some beer and have half-dressed waitresses bring us pitchers and wings. ;)

I have chicken and mole' simmering now. Several hosky's consumed. Pickled 'penos in the freezer firming up for stuffing. Cast iron fryer heating up. Pics manana.

Ribs AND Deer steaks! :woohoo: That sounds wonderful....especially with some hearty and SPICY potato broccoli cheddar soup to warm yer bones!

Decided against the broccoli. That would just have been too damn healthy. It's on the stove right now. Piccys soon.

This is before the cream and cheese are added. Ingredients: 2.5lbs Russet potatoes, two cans of beer, 32oz chicken broth, jalapenos, serranos, 1/2 a yellow bell, 1/2 of a sweet onion, salt, pepper, thyme, gruyere cheese, cheddar cheese, muenster cheese. More to come.
 
I'm probably going to be in trouble as it turned out a lot spicier than I thought. Tastes great to me. The smoked Gruyere makes it.

Oh and I added a diced heirloom tomato and some cilantro at the end. Garnished with some crispy bacon.
 
Hey ya'll. I dunno' what happened to my camera last night but I only have one pic worth a damn. I had some pulled chicken that I tossed into the cast iron with some mole'. Lemme' 'splain you Lucy, I couldn't stop eating it right out of the pan before getting it on a tortilla. I also took some pickled 'penos and stuffed and fried them for poppers. 'Lawd have mercy!

Lame hell. That looks down right delicious! What all is in that wrap?

Ok here we go for round two. Mojo venison steaks. That's it, just marinated deer steaks in mojo browned in the cast iron with just a touch of jalapeno oil. After they browned for a minute on each side I threw the marinade in there and let them cook another minute. Delicious and tender. I see some wraps coming with the leftovers...

I sauteed some minced garlic and onion in the cast iron with some canola, then added some pulled roasted chicken. I added some store bought Costadena Mole' to that and let it slowly simmer for about 45 minutes. While the store bought is okay, I prefer to make my own but it takes awhile and requires a lot of ingredients...i.e I was lazy!
I wrapped the chicken up in the tortilla with some chopped green onion and just a little jack cheese.

I gotta' tell you....the pickled poppers were really fantastic. I stuffed them with one of those cheddar/bacon logs that come with the almonds. Dredged in flour, eggwash, panko and then deep fried......Good 'Gawd Ya'll!!! My new favorite popper!!
 
Also, some country style pork ribs that were marinated in a store bought mesquite marinade spiked with about a half a bottle of 357 Ghost Pepper sauce. I then put the rub on the "Kick Butt chipotle honey rub" on them and into the oven they go. I would usually grill them, but it is raining. The drink of choice at the moment is Vodka spiked fruit punch.
