Ever get those Mexican plates where you chose two or three things, I love the Mexi-combo plates, I used mix it up with a tamal, or a chile relleno, a taco, an enchilada, etc. Then they sauce it, cheese it, and bake it. Mmmmm.
Anyway the combo plate got me thinking. I'd like to do regional Mexican. As we know, Mexican food is more than tacos and burritos, and is very different by region. So I was thinking. Take your favorite "popular" Mexican fare, then research (or JayTee) where it is from in Mexico, and pair it with something unique from that region. So you end up with a combo plate of one item we all know, and one we may or may not, but try to make it unique. Tell us about the regional history of both. This pairing also has to be accompanied by a celebratory drink even if it is beer... it 's Cinco de Mayo!
