Almost all of Mexican cuisine can be trace to Spain and Europe.
Even the almighty wikipedia acknowledges the origins of Mole are disputed.

No, see, you guys nit-pic sometimes, then other times you roll with things. Hard to know which way the wind blows sometimes. In Texas, it's only really been fairly recently that places have actually called themselves "Tex-Mex" - used to be every restaurant with cuisine even remotely close to Mexican just called themselves a Mexican food place. But a while back I posted a dish I consider to be Tex-Mex, but you razzed and said it belonged in the Mexican thread, not the Tex-Mex thread. And Tex-Mex places do up Cinco de Mayo just as much as Mexican places do. So yeah, is this "Cinco de Mayo anything Mexican-influenced goes", or is this "Cinco de Mayo it had better be only traditional Mexican"?Scovie you are overthinking this one bro, Mexican food is Mexican food not matter who influenced it. If we did Cajun you'd be asking if that includes French-influenced.
