Boss is very particular about language, and said Neapolitan, and not Margherita - which I think would have been a little bit more relaxed ...
The whole schtick of Neapolitan pizza is that it's not a relaxed specification, it's narrowly defined ... and the cook temp is a critical component, for sure ...
