I need to take my POC sushified taco roll, get more (colors and ingredients into it), and I'll have to tackle doing the cook on the grill, and not in the sous vide ... and then I'll have to get the "fatty" of sorts wrapped in a bigger tortilla (which I might have to make) and get it all golden-y awesome ...
 
We'll see ... my kind of fun, though ... no doubt.
