I used to be a big farmed fish fan until many in the trade started using hormones and fish feed of dubious origin. Got to the point a few years back they started adding carotene dye because the flesh was coming out gray instead of its natural orange color which can only be gotten if fed their natural diet.
Wild caught fish also have raised a few issues. The demand has invited all sorts of dubious marketing practices. I've seen for years fish mongers selling salmon labeled as premium Alaskan Copper River King or Sockeye salmon. Red flags are raised when it is witnessed and clearly identified that the fish in question is actually Chum or in some cases fall caught Coho or Silver rather than spring caught King/Chinnok or Sockeye/Red. Then there's the actual quality of the fish. I've seen boat holds unloaded with unrefridgerated whole fish, ungilled and not bled that were caught in the morning only to make it to the processor in late afternoon. Ya gotta get that sheeit on ice pronto and at least bleed the thing out if not take off the head.
Still there's enough of a difference in both the farm and wild caught that you can find excellent sources of quality fish with either.
USA farmed has gotten heaps better especially with farmed steelhead. Chile exports an increasing amount of farmed coho salmon and steelhead and while looking legit, the quality is not very consistent.
In my ideal world yes, I'd only buy USA wild caught but you just can't get fresh USA wild caught all year. That leaves sorting through the BS of all the farmed fish and its issues.
I love fish but I won't buy just anything no matter what the source. Whenever I can I want to see the whole fish especially the eyes and even more so the skin. I want to know for certain I'm paying for at least the same species thats being sold.
Thankfully Texas has plenty of Gulf shrimp available fresh and frozen all year round. A lot less to worry about and but damn do I love shrimp!
Maybe some time I'll get my butt scratchers on some of them Carolina shrimps. I have no doubt they're most excellente'!
